Biographical NoteReturn to Top
Ella Frances Miles was born in Chicago in 1886. She attended high school in Omaha, Nebraska before moving to Ontario, Canada where she completed her high school and college education, graduating from McDonald Institute at Ontario Agricultural College. In 1909, she studied education at Columbia University. In 1910, she began teaching Domestic Science (i.e., Home Economics) at Kansas State University. In 1912, she married Edwin G. Schafer, an instructor of Agronomy at Kansas State University. In September 1913, they moved to Pullman, Washington, where Edwin served as a Professor of Farm Crops at Washington State College (now Washington State University (WSU)). While living in Pullman, Ella was an active member of the Ingleside Book Club and the WSU Women’s Faculty Club.

The collection consists of a variety of materials collected and created by Ella Schafer for her home economics courses. These include class notes, pamphlets, cookbooks, and publications dating between 1894 and 1925 relating to cooking and nutrition, as well as textiles. A majority of the publications are from the Kansas State Agricultural College and Farmers Bulletin. A handful of commercial publications from manufacturers of food and cooking equipment are also in the collection.
